A Bit About the Coffee Yirgacheffe has long been celebrated for its floral and tea-like coffees, but natural processing brings a distinctly fruit-forward expression to the region. This coffee comes from the high elevations of Gediyo in the Yirgacheffe region, where ripe cherries are carefully dried on raised beds. The natural process allows the fruit character of the cherry to develop during drying, resulting in a vibrant and complex cup with pronounced fruit and floral notes.

Roaster's Notes This natural Yirgacheffe is a vibrant and fruit-forward coffee with juicy acidity and a creamy, round body. Notes of grapefruit, plum and red berries create a complex fruit character, while subtle floral aromatics add another layer to the cup. The finish is clean and fruity, leaving a bright and expressive impression.

Barista's Notes This coffee really comes alive as a filter brew, where the juicy acidity and fruit character can shine. Expect grapefruit and red berry notes with a creamy texture and a clean finish. As espresso, the natural process brings plenty of fruit intensity, while a slightly longer extraction can help develop the plum sweetness and round out the acidity.

A bit about the ECX: These Ethiopian beans are specialty beans sourced through the Yirgacheffe Coffee Farmers’ Cooperative Union and traded on the Ethiopian Commodity Exchange (ECX), the primary platform for coffee trade in Ethiopia. The ECX was established in 2008 and is often credited to Eleni Zaude Gabre-Madhin, an Ethiopian economist. The introduction of the ECX has generally been seen as successful in enhancing the livelihoods of coffee farmers and making price information more accessible. However, there is a consensus among stakeholders that improvements are still needed, particularly in areas such as farm traceability, cupping capacity, and international market access.
